Seriously. You can always steam a raw-ish floret for another 30 seconds. You cannot un-mush it. Under-cooked broccoli is crunchy and fine; over-cooked broccoli is a sad, wet memory.
So pull it out a little early. Let it rest. The residual heat will finish the job. You are a vegetable whisperer now.
What About the Stalk?
Don’t you dare throw away the stalk. It’s the best part. Peel off the tough outer layer with a knife, then slice it into coins or sticks. Cook it right alongside the florets. It’s sweeter and more tender than the tops.
You’re basically eating the whole plant now. Very efficient. Very cool.
