If you’ve got cheddar, gouda, or provolone slices, you’re in luck. These firm cheeses have less moisture, which means mold takes longer to show up. I’ve pushed them to 10 days after opening and lived to tell the tale.
Just look for the first sign of fuzzy green dots—that’s your cue to say goodbye. Or, if you’re brave, you can cut off one inch around the mold spot and eat the rest. I do it. Don’t judge me.
The Soft Cheeses (High-Maintenance Drama Queens)
Mozzarella, brie, and havarti slices are a different story. They’re like that friend who texts you “I’m on my way” and shows up three days later. They go bad fast—usually within 3–5 days of opening.
You’ll know they’ve turned when they get slimy or smell like a gym locker. Trust your nose on this one. If it makes your eyes water, it’s a hard pass.
