Your oven temperature is your stage, but the internal temperature is the final curtain. Forget what the clock says first; trust your thermometer. You want the center of the loaf to hit 160°F (71°C). That’s the magic number where ground beef is safe but not dry.
If you’re using a mix of meats (beef, pork, veal), aim for that same 160°F. For an all-pork or all-turkey meatloaf, you can push it to 165°F just to be safe. Don’t argue with me—argue with the USDA.
So, How Long Are We Talking?
For a standard 2-pound meatloaf baked at 350°F, you’re looking at about 55 to 65 minutes. But seriously, start checking at 50 minutes. Every oven is a little liar, and your pan’s material matters.
A dark, non-stick loaf pan will cook faster than a shiny glass one. A free-form loaf on a sheet pan (my personal favorite—more crust!) will finish about 10 minutes sooner. Your mileage will vary.
