Add a generous glug of olive oil. I’m talking a few tablespoons—don’t be stingy. The oil is your flavor vehicle, your crispy accomplice. Heat it over medium-high until it shimmers like a mirage.
Toss in the broccoli florets and stem coins. They should hiss when they hit the pan. If they don’t, the pan isn’t hot enough. Crank up the heat and wait thirty seconds.
