You might spot tiny white flowers starting to form. That’s the bolting I mentioned earlier. Pinch or snip those flower buds off immediately. It tells the plant, “Not yet, buddy. We’re not done with leaves.”
If you let the flowers open, the leaves will turn bitter. And bitter cilantro is a tragedy—worse than finding out you’re out of lime for your guacamole.
