Don’t be fooled by bright yellow corn. That color often means it’s field corn, which is for cows, not humans. Sweet corn can be pale yellow, white, or even bicolor. The lighter the color, the more sugar and less starch.
White corn is the classic sweet, delicate type. Bicolor (yellow and white) is a hybrid that gives you a bit of both worlds. And if you find blue or purple corn, buy it immediately—it’s packed with antioxidants and makes you look like a culinary adventurer.
Don’t buy corn that has brown, shriveled tips. Those kernels have been dead so long they’ve probably been reincarnated as something else.
