Do not substitute with water or milk alone. That makes brownies dry and sad, like a beach without waves. You need fat, or at least a fat-imitator, or you’ll get cardboard.
If you’re out of everything, though, you can use butter plus applesauce. It’s a weird hybrid, but it works. Desperate times call for desperate brownies.
